a wine of well-ripened grapes
Valle d’Aosta
(70% Petite Arvine - 30% Moscato)

The vineyard covers 2.500 sqms, on one single plot of land, at an altitude of 800 ms above sea level.

The grapes are harvested when well ripe, towards the first week of October, put into small plastic cases that are stacked inside a specific dehumidified room. They are kept at a constant temperature for about 60/70 days to complete the over-ripening of the grapes (about 400/420 grams per liter of sugar). It is crushed and then put for a rapid maceration of about 24/36 hours at a low temperature.  It is then pressed and a slow fermentation in steel tanks starts (about 25/30 days). Once fermentation is finished, the wine is put to age for about five months.

 It is filtered and bottled in summer and is ready for sale at the beginning of October.
